In this work the basic device is a core diameter mismatch (CDM) structure composed of small simple arrangements of singlemode (SMF) and multimode fibers and the balloon structure made of bent singlemode fiber. The proposed sensors are easy to fabricate, simple, cost effective and are safe for the environment. In this work, the simple all-fiber sensors are developed to measure salinity and temperature using multimodal interference, with applications as temperature and salinity sensor. We demonstrate four types of CDM structures with balloon shaped SMF sensor for individual and simultaneous measurement of salinity and temperature. By measuring the wavelength shifts spectra in each scheme, simultaneous measurement of temperature and salinity could be achieved. Simulations for the CDM structures were performed by using the Beam Propagation software. Among all the CDM structures, the SM1SM2S sensor shows the best salinity sensitivity with 402 pm/%NaCl. For the temperature measurements, the SM1SM1S sensor shows the best sensitivity among all the structures with a maximum value of 377.62 pm/℃. With the combination of the CDM and balloon shaped sensor for salinity measurements, the SM1SM1S and balloon shaped sensor depicts the best sensitivity among all the other structures with a value of 168 pm/% NaCl. For the temperature measurements, the SM1M2S structure combined to the balloon structure shows a great sensitivity with a maximum value of 735.6 pm/°C. Concerning the simultaneous measurement, the SM1SM2S with the balloon shaped sensor presents a maximum sensitivity of 2.86 dB/°C at 10% NaCl saline solution.en
