Resumo

From the perspective of refuge, this research discusses the role and impact of the African diaspora's culinary practices and knowledge, as a cultural resistance tool in the reconstruction of black refugee's identity from African countries, who are now living and supporting themselves in the city of Rio de Janeiro as entrepreneurs in the gastronomy field. The aim is to highlight African cuisine not only as a source of work and subsistence, but also as an indicator of how these individuals and respective food cultures sustain themselves and manage to adapt to new cultures and new territories. Through this kind of food, which carries in its repertoire cooking techniques passed down from generation to generation and is sold in markets with a large social circulation in the city, a contemporary study of Rio's gastronomic scene is proposed, where African food is increasingly present and represented by street food culture. In face of this new diaspora scenario, refuge emerges as a possibility for a new beginning. Taking African cuisine as a practice that allows the circulation of black memories in diaspora and the construction of new bonds with the new territory, three elements stand out in the research - cuisine, memory, and refuge - which are intersected through identity. In order to further the discussion on the connection between these elements with the field of Ethnic-Racial Relations studies, this work presents key conceptual terms such as migration, diaspora, territory, territorialities, street markets and transmigration, among others. Through open interviews with some refugee participants and using an ethnographically inspired qualitative methodology, with a focus on field research and participant observation, this study seeks to investigate how these individuals' social interactions with market visitors and with the territory occur. Based on direct experience through the perception of seeing, hearing, and writing, the study proposes to examine how the new narratives emerging in this scenario enable the reconstruction of memories and identities connected by food. As a result of the research, fieldwork, and narratives shared by the interviewees, it became possible to identify that starting over in diaspora contexts constitutes a continuous process of rebuilding bonds and refugees' and migrants' identities, which are interpreted through cuisine. Furthermore, it was observed that food plays a fundamental role by enabling these individuals to reconnect with their cultural roots and, above all, to build new connections with other people in other territories, using culinary knowledge as a tool for survival, resistance, and social integration.
